The recipes we use to prepare our dishes come from cuisines all over the world: bouillabaisse, cacciucco, Norwegian fish soup, Tuscan frutta di mare soup, tuna tartare, and the list goes on. We’re not looking to rethink anything here, you don’t take to fusion cuisine nor do we prepare fine-dining dishes, and especially don’t conjure up microcosm-like food on our plates.
